Nitrites in Hotdogs Can Kill?

Coming off an article from That’s Fit I dug around a little bit and can’t say I entirely agree.  Digging a little deeper to a LA Times article they tell the story of how the nonprofit Cancer Project filed a lawsuit Wednesday on behalf of three New Jersey plaintiffs asking for companies to place cancer-risk warning labels on hot dog packages sold in New Jersey.  They want to go so far as to place something along the lines of  “Warning: Consuming hot dogs and other processed meats increases the risk of cancer.”  WOW!

Personally I have long switched to Turkey Dogs (still processed meat) and never looked back but I am still interested in seeing what evidence they have.  What frequency of hot dog comsumption can lead to a deadly level of nitrites in the human body?  Wouldn’t this apply to most cold-cuts as well?  Everything can be linked to cancer today though, can’t it?  I mean seriously!
